Menetou-Salon's benchmark producer—Domaine Pellé accounts for 25% of the entire appellation's production. Les Blanchais is a 2.7-hectare parcel planted in 1966 on Kimmeridgian marl (the same limestone found in Chablis and Chavignol) with 15-20% flint. Fourth-generation Paul-Henry Pellé converted to organic in 2007; everything is hand-harvested (rare here), indigenous-yeast fermented, aged 11-12 months. His grandfather Henry lobbied to put "Morogues" on the label because of its distinctive Kimmeridgian soils. This is Sauvignon Blanc with the minerality of great Chablis.
