Seiichi Saito, a Japanese winemaker of Chinese origins, studied at the wine school in Beaune before working with some of Burgundy's most acclaimed names: Bize, Mugnier, Rousseau, and Leflaive. In 2016, he launched his own project on just 2.1 hectares, farmed biodynamically. De Sousa comes from Pinot Noir vines planted in 1949 in Les Lormes, Pommard—named for the parcel's former owner. The wine is 100% whole cluster fermented with no added SO2, minimal punch-downs, and aging in used barrels without fining or filtration. Saito's approach is to let the vineyard speak: no new oak, no manipulation. The 2022 vintage in Burgundy produced wines of wonderful typicity and freshness. This is regional Burgundy with the attention to detail of a premier cru.
