Peyrassol, Chateau Peyrassol Rose, 2025

The Knights Templar planted vines at Peyrassol back in the 13th century, and the estate has been making wine on this Provencal land ever since, first harvest documented in 1256. This is the flagship rose, the heart of the range, drawn mostly from old vines across the estate's clay-limestone soils and farmed organically. Pale as lychee, silky, and saline, it's exactly the kind of serious-but-effortless pink that made Provence rose famous. A cornerstone of Flatiron's summer every year, and for good reason. Chill it hard and don't overthink it.
