Château Peyrassol traces back to the Knights Templar, and the Cuvée des Commandeurs is a step up in elegance and complexity from its everyday bottlings. It's a light-colored, refined blend led by Grenache with Cinsault, Syrah and Mourvèdre, plus a touch of Vermentino that lends a unique sense of refinement. The vines grow mostly in clay and limestone soils with a bit of schist, which keeps the fruit in check and amps up the savory mineral notes.
