Peyrassol, Cotes de Provence Rouge Le Clos, 2019
Eight centuries of winemaking, distilled into a single Provence red. The Commanderie de Peyrassol was founded by Knights Templar in the 1200s, and the estate has been continuously producing wine ever since, with Philippe Austruy taking ownership in 2001 and reinvesting heavily in vineyards, cellar, and even a contemporary sculpture park. Le Clos is the estate's higher-tier red, built from Syrah and Cabernet Sauvignon from the walled Clos parcel, which gives this wine its distinctive dark-fruited, savory profile. Six years on from harvest, the 2019 has shed any baby fat and arrived at a beautifully resolved place: garrigue and crushed stone, dark cherry and dried herbs, fine-grained tannins, and that unmistakable Provencal salinity threading through the finish.
