Pierre Gerbais's single-parcel Blanc de Blancs from Celles-sur-Ource in the Aube, where Aurelien Gerbais farms a Kimmeridgian-rich, Chablis-like terroir under organic principles. Champ Viole is a south-facing parcel of Chardonnay, vinified in stainless steel and blended with their perpetual reserve (started in 2011), aged 36 months on the lees and finished at extra brut dosage. Production is tiny, roughly 7,700 bottles. The aging in solera-style reserve gives the wine real depth and savory complexity, while the parcel's chalky Aube limestone keeps the nerve electric. This is grower Champagne at its most pinpointed: precise, fleshy, mineral, and exactly the kind of bottle that has put the Cote des Bar on the modern map.
