Wasenhaus, Spatburgunder Hohlen, 2023
German Pinot Noir from Christoph Wolber and Alexander Götze, who both trained at top Burgundy domaines before returning to establish Wasenhaus in 2018 on Wolber's family farm in Staufen im Breisgau, Baden. About 6 hectares across a patchwork of granite, volcanic, and limestone soils with löess topsoil. Hand-harvested, naturally fermented with minimal intervention—few punch-downs, low sulfur, soft extraction. Practicing organic and biodynamic methods but not formally certified. German Pinot with uncommon lightness and textural elegance.
