Azimut is the Suriol family's project of organic, traditional-method sparklers made from their own grapes and certified-organic fruit bought from like-minded neighbors. This rose Cava is a 50/50 blend of Garnacha and Monastrell grown on clay, limestone and loam in Penedes, made by the traditional method with a short maceration for color and aged over nine months in bottle. Brut Nature means no added sugar, so it stays crisp and dry rather than fruity-sweet. A clean, food-friendly pink sparkler with real character for the price.
