Selected from casks that retained delicate flor yeast despite exceeding six years of aging, these wines are bottled unfiltered and unclarified to preserve maximum character. The chalky albariza soils of Jerez—white earth that stores winter rainfall and releases it slowly through dry summers—produce the neutral Palomino base wine, while the living flor culture creates the distinctive tangy, yeasty complexity.
