Avignonesi's Vin Santo is one of Italy's great cult sweet wines, made with near-fanatical patience. White grapes (Malvasia, Grechetto and Trebbiano) are dried for months, then fermented and aged for years in tiny sealed caratelli using the estate's century-old "madre" yeast, while much of the wine simply evaporates away. What's left is a tiny, intensely concentrated production. This 1989 is from a private collection and now fully mature, deep amber and resolved.
