Aglianico del Vulture, made by a family of notaries — hence the cuvée names that read like legal terms. Cantine del Notaio works the volcanic slopes of Mount Vulture in northern Basilicata, aging its wines in natural tuff caves beneath the cellar. L'Atto, "the deed," is the entry into their range and a smart way into Aglianico generally: hand-harvested in early October, fermented in stainless steel, then aged about a year in French oak tonneaux in those underground caverns. The 2023 is built around fresh red fruit and spice — cherry, raspberry, black pepper, a touch of dried herb — with the variety's classic structure smoothed into something more open and immediately drinkable. Real Vulture character, no homework required.
