Giampiero Bea, co-founder of Vini Veri, makes Montefalco wines the old way: native yeasts, long slow fermentations, years in big neutral casks, and bottling without fining or filtration. San Valentino blends Sangiovese with the region's brooding Sagrantino and some Montepulciano, off clay soils at around 1,300 feet. The 2008 is a mature bottle from a private collection, drinking in its complex tertiary phase. Give it a long decant; Bea's wines reward patience and air.
