In the Aube — Champagne's southern outpost of Kimmeridgian limestone, closer to Chablis than to Reims — the Gerbais family has spent four generations championing single parcels and rare grapes. "Champ Viole" is their pure Chardonnay Blanc de Blancs, named for the violets that bloom in a plot planted around 1989, and vinified with a low-intervention hand: indigenous yeasts, minimal dosage, extended time on the lees. Now led by Aurelien Gerbais, this is grower Champagne in its most transparent form, expressing a specific patch of clay-limestone rather than a house style.
