Robert Weil sends pickers through this brutally steep, southwest-facing slope up to 17 times, selecting only the ripest late-harvested fruit off barren phyllite and loess soils, no botrytis here, just concentration from a long, sun-drenched hang. That means the sweetness is pure, honeyed ripe-fruit sweetness held in perfect tension by acidity, not the raisined intensity of nobly rotted wines. 2007 was a high-acid vintage that was underrated young and has aged gorgeously, and at nearly two decades this bottle drinks in a beautiful mature window. Serve it well-chilled and let it do the talking.
