Thierry Allemand learned his craft apprenticing under Robert Michel by day and the legendary Noël Verset by night before going solo, and his Chaillot cuvée comes from the steep east/southeast-facing slopes above the village—the gentler counterpoint to his more powerful Reynard bottling. 2014 was a classical Northern Rhône vintage: cooler, more lifted, less weight than the warmer years, which suits Chaillot's natural elegance perfectly. Eleven years on, this has settled into prime drinking territory, where Allemand's no-sulfur-until-bottling, minimalist hand lets Cornas speak in its native dialect of black fruit, violet, iron, and smoke. One of the few addresses where the legend matches the wine in the glass.
