Sylvain Fadat is a pioneer of serious Languedoc wine, farming organically and biodynamically high up in Montpeyroux since he founded Domaine d'Aupilhac in 1989. Les Servières is his pure Cinsault, a grape usually relegated to rosé but here taken completely seriously: old vines, low yields and a wine of real lift and finesse. Bottled as an IGP because Cinsault sits outside the appellation rules, it's the south of France's answer to a fresh, drinkable red with a savory backbone. This 2012 is a back-vintage now showing some maturity, so expect the fruit to have softened into earthier, more savory territory. Drink it on the cooler side.
