Philip Togni planted his estate at around 2,000 feet in the early 1980s, and his Cabernet (with Merlot, Cabernet Franc, and Petit Verdot) is built for the long haul: structured, mineral, and built to age for decades rather than impress young. This is the 1997, a celebrated Napa vintage, in magnum, the format collectors prize for slow, graceful maturation. A mature mountain Cabernet at a beautiful stage, and a large bottle to share.
